The Edible Education Project is dedicated to sharing and spreading its innovative farm-to-plate educational food systems concept with individuals, religious institutions, schools, not for profit organizations, and public agencies. Our vision comes from the work of Dr. Kip Curtis, who combined his experiences growing up on a sustainable farm in the 1970s with a doctorate in environmental studies and sciences and more than two decades work as an educator to re-imagine food systems as sites for experiential education, food literacy, and community development. Our goal is to help those who seek to develop healthy local food systems and sustainable communities to develop appropriate, sustainable, and place-sensitive solutions. Farm to plate and farm to school food systems should be built to provide economic development, educational support and food literacy lessons. Schoolyard gardens can grow minds, character and community as much as they can grow food; they are experiential classrooms where science, math, and language arts can be taught. Healthy local food systems can become opportunities for community volunteering and can help build connections between institutions and the people they serve. Connecting farms to schools and other institutions can create opportunities for green economy training and certification, economic development and community revitalization.
