In the early 2000s, our founder Cybele Pascal was a professional writer living in New York City. But after her son was diagnosed with food allergies, her world changed. Not wanting to sacrifice her love of appetizing meals to food allergies, Cybele began developing allergy-friendly recipes that she eventually complied into a cookbook. That cookbook, The Whole Foods Allergy Cookbook, made its way into the hands of Martha Stewart and the rest is history. Cybele went on to write two more cookbooks, The Allergen-Free Baker’s Handbook and Allergy-Free and Easy Cooking, as well as multiple food columns. Then in 2013, Cybele founded Cybele’s Free-to-Eat so she could bring her favorite recipes to the masses. The company soon debuted two lines of allergy-friendly foods.
