My passion is dealing with food waste in an environmentally friendly way, and am working on 3 options: 1. EcoSink - innovative brand of domestic/light commercial kitchen food waste disposers. 2. Anaerobic Digestion - where the volume of food waste makes it economically viable to be processed, and the methane gas produced either burnt on a hob, or through a heat exchanger converted into electricity. Having said that a small scale AD plant has been installed in a school in Central London, processing only 5kgs of food waste a day. 3. WasteMaster - this is a new machine, using Japanese technology, which 'makes food waste disappear', literally. No energy is produced, but there is no residue, no waste, and no odour, so can be sited in a hotel kitchen. The first unit is now in UK, and can process between 200 ~ 500kgs of food waste a day.
