During the day, the fishmongers continuously decrease the price of the fish to sell out all the fish we have available. In this way we avoid unnecessary food waste. Because guests participate in our concept, we need fewer staff in our restaurant. As a result, our staff costs are lower than in other restaurants, so we can offer the fish at an even lower price.
