We use a special blend of selected Italian flour and only top quality ingredients imported directly from Italy. Our dough is left to raise minimum of 36 hours for pizzas and 48 hours for bread. Our pizzas are cooked in the artisan Italian oven on 400 degrees for 75 seconds-no more no less which gives us the perfect mix of lightness and texture. In Pizza Madre we serve our pizzas according to Neapolitan tradition "al metro" style: 1/2 metre enough for 2 people and 1 metre for 4 people.
