How It Started The original Kolache Kitchen opened in January 2013 in Baton Rouge, Louisiana just steps away from Louisiana State University. Will Edwards, Houston native, saw the absence of kolaches in the Baton Rouge area. With overwhelming support from his family and friends, Edwards opened his first location less than two years after he graduated from LSU. Thanks to the Baton Rouge community, the first location has thrived ever since the day it opened. Due to high demand and continuing support, Edwards opened his second location on Jefferson Highway in Baton Rouge in April 2015. What is a kolache? A kolache is a hot fresh baked pastry, prized for its soft, pillowy dough and its versatility. Kolache fillings range from sweet to savory. Originating in Central Europe, kolaches became popular in certain parts of America, especially Central and South Texas.
