Ragged Coast Chocolates (formerly Black Dinah Chocolatiers) is an artisan chocolate confectionery founded by Kate and Steve Shaffer in 2007 on the tiny island of Isle au Haut, Maine. Our confections are made from sustainably grown and harvested single origin chocolates from Ecuador, Peru, Venezuela, Dominican Republic, and Hawaii. All of our ganache and caramel centers are hand-made in small batches with local cream and butter (the farmers deliver it right to our door!), and organic produce foraged and grown by our friends and neighbors. We don’t use artificial flavors, extracts, or oils to flavor our confections; instead, we use the whole ingredient. Purees made from fresh, in-season raspberries and black currants flavor our raspberry and cassis dark chocolate truffles. In the fall, we use heirloom variety apples from local orchards to make our Northern Apple truffle. We source our organic lavender from a nearby farm to make our Lavender Sea Salt caramels. Every confection in our Farm Market Collection features an ingredient from a Maine farm or garden. Making our confections is a labor of love, in the truest sense. From processing crates of fresh produce, to hand-moulding our bon bons, Kate and her small team of chocolatiers are utilizing both traditional and modern chocolate-making techniques to create confections that look as amazing as they taste. And our customers can tell the difference. Ragged Coast Chocolates has won two Good Food Awards, been named a Top Ten Chocolatier in North America by Dessert Professional, and been featured in numerous regional and national publications; including the Boston Globe, Martha Stewart Living Magazine, Gourmet Magazine, and others.
