Respecting tradition, our olives are harvested by hand, avoiding any damage to the olives or the twigs. They are produced in the regions of Ermioni and Kranidi in the Peloponnese in over 100 hectares. Most of the estate’s oldest living olive trees are estimated to be more than 900 years old and still produce prized olives. The region has high hills covered with olive groves and small forests. With a south-facing aspect, the olive trees are exposed to direct sunlight and the micro-climate is warm. Almost 80% of the olive trees in our estate and in the region of Ermioni, are the ‘Manaki’ variety. Manaki is the local variety grown in Ermioni for centuries. It is resistant to high altitudes, with dark color, oval shape and a distinctive sweetness. It is considered one of the most recognizable and excellent quality Greek olives. Koroneiki olives are rather new in the region, cultivated during the last five decades. These are resistant to low temperatures and drought, small and green with a vivid flavour. We source our olive oils from these varieties. The olives are cold pressed within five hours after harvest, resulting in low acidity and therefore retaining the best quality olive oil.
