The fruit-foods group, classified A1 in Colciencias, has extensive experience in bioprocesses. This group focuses its work on industrial biotechnology, production of chemical substances and Bioenergy, using living cells and their enzymes, through clean processes ‘White Biotechnology’, in addition, the group has researched on the use of biopolymers or inorganic materials as catalytic supports or for the immobilization of enzymes to use them in organic and inorganic media over the past 24 years. In food technology, the group has a long history in food characterization, probiotics, formulations, food product, and process design, food drying (spray drying, freeze-drying, vacuum drying), production, purification and applications of functional biomolecules of industrial or pharmaceutical interest, microbiological control, shelf life, studies of  feasibility of processes and agribusiness assemblies.
