The Kyoto Distillery commenced production in August 2016 in Kisshoin, in the suburbs of Kyoto. Our flagship product, KI NO BI Kyoto Dry Gin, was launched in the domestic market in October 2016 and is now also available selectively in certain overseas markets, including the UK, France, Italy, the US, Singapore, Taiwan & Hong Kong. KI NO BI is a craft gin in the true sense of the word. We utilise 11 botanicals, 9 of which are from Japan, where possible from Kyoto Prefecture. These include yuzu fruit, sansho pepper and ginger from Ayabe and the finest gyokuro teas from Uji. We also use the waters of Fushimi to reduce our gin to bottling strength, waters that have been famed for centuries for their roll in producing the finest nihon-shu (sake). Our base spirit is derived from rice, which not only has significant cultural connotations in Japan, but also adds sweetish and a creaminess to the finished product. We are a small, passionate team, dedicated to crafting the finest gins that we can. We are proud of our Kyoto heritage and of the collaborations we have struck up with centuries-old local companies, such as KIRA KARACHO in the design of our labels, Horii Shichimeien tea blenders in the creation of our KI NO TEA limited edition gin and many local farms with whom we maintain a close relationship an where possible, help with the harvesting of the botanicals that will go into KI NO BI
