We kept some of the olives for ourselves and took the rest to a nearby town to make oil. There’s a very sentimental romance associated with the process -- picking the fruits with my family, cleaning it of the leaves, bringing it to the mill to become oil, and then storing the big bottles in the darkness for two years. I have been participating in this ritual since I was a young boy in my orchard. Each stage from the picking, to the processing, to the storage brings me great joy.
