2007 - Tommy Collins formed as an event caterer, a total hospitality solution, all about good food and good times! 2009 - The Little Ox was introduced as the first café/retail offering by the TC team. 2011 - A relationship commenced with the organisers of the Portsea Polo. The team thrived in delivering a premium catering service. TC catered the Neil Perry fashion show for L’Oreal Melbourne Fashion Festival, which was the start of an on-going relationship with the team, resulting in a 3 year contract with VAMFF. 2012 - Hawk & Hunter Small Batch Café was launched. 2013 - LT. Collins opened by Tommy Collins, setting a new benchmark in both design and format for business park cafés. 2015 - Sth Central was launched as a visionary hospitality partnership between Tommy Collins, chef Simon Winfield and front-man Leroy Smith; who combined their shared love and knowledge of the industry. The first exclusive event space created by Tommy Collins was launched. The Pop Up Patch opened and was a roaring success. 2016 - TC opened The Hamptons Bakery, a luxurious 100 seat café, with fresh bread and pastries baked in-house. Due to popular demand, a revamped version of The Pop Up Patch was created for the Spring / Summer event season. 2017 - Tommy Collins launched House of Lulu White, a modern and playful café in South Yarra celebrating the bottomless brunch concept. Melbourne Racing Club engaged the team to deliver food excellence and innovation within the Moet and Veuve Clicquot enclosures. 2018 - Melbourne Art Fair engaged the team as the exclusive caterer for all associated events, corporate hospitality packages and retail outlets. 2019 - What a year! January - Portsea Polo, catering marquees for Alfa Romeo, Stella Artois, MRC & Jaggad February - Twilight Beach Polo March - Flinders Polo & Virgin Australia Melbourne Fashion Festival June - Good Food Month, working with Marco Pierre and Australia's leading chefs
