The signature ale sits somewhere between a classic Australian golden ale and Belgian blonde that personifies high quality craft ale without being too bitter, too malty or too fruity..... For founder Ze'ev Meltzer though, his brewing journey dates back a lot further than Collins St Brewing Co's 2016 birth date....... "My beer journey started before I really should have been drinking beer. My parents sent me to a religious boarding school in Israel and, because of a lack of other things to do, we decided it would be a good idea to use the school kitchen to brew beer. That’s where it all started. It was me and three mates who would break into the school kitchen on a Thursday night to brew our beer." Luckily, Ze'ev is now old enough to be drinking, and his story is at the root of everything we do. Collins St Brewing Co is about the transition from big to small. It is about the journey from macro brewery to craft beer. From corporate life to brewing life.
