The OPAS agricultural co-operative is the largest product association in the Italian pork industry, with over 150 members selling more than 10% of the total number of pigs born, reared and slaughtered in Italy to produce top quality delicatessen products. OPAS activities mainly include the sale and processing of pigs supplied by its members, especially in the areas in Italy most dedicated to PDO products, such as Lombardy, Emilia Romagna, Piedmont and Veneto. As a result of the economic importance of the national pork chain integration project, OPAS has been recognised as a Product Association at an inter-regional level, thanks to members who provide their entire production, establishing the Farm to Fork initiative. The farms belonging to OPAS fall within the geographical area where Parma and San Daniele prosciutto are produced with Protected Designation of Origin (PDO) status, brands which are recognised internationally and stand for the best of Italian cold meats. All pigs reared by OPAS members comply with regulations set out in production standards, in addition to the most stringent legislation on animal and environmental wellbeing. With its activities in the new local Italcarni premises (Carpi), OPAS can guarantee that pork is processed in accordance with the most important international accreditation procedures for production processes.
