Rebel City is a boutique distillery at the vanguard of a new wave of craftsmanship. A new industry which is finding home and breathing new life into long abandoned factory building in Cork’s historic Docklands. Taking the legacy of the old Ford Building and transforming it for a global Ireland of the twenty first century. The spirits we create here are borne of this rich Leeside heritage; we source our ingredients from across the globe to celebrate and reflect the unexpected connections and cultural vibrancy that have always been the hallmark of the world’s great port cities. Fusing a longstanding heritage of craft with a splash of experimentalism, Rebel City Distillery was founded by Robert who brings ten years of fine spirits making experience build with distilleries around the world, and his wife Bhagya who grew up steeped in the culture heritage of Kerala; a place renown even in India as ‘the land of spices’. Maharani, our first spirit, is a fusion of these two creative cultures and a gin of truly transcendent taste. A liberation of spirit and spice and a multi-award-winning gin. A tribute to Keralan women, known for their strength and importance in society, Maharani symbolises revolutionary Keralan rebel spirits and figures of female empowerment. Our gin is zested with pomelo, and uniquely spiced with cassia and nutmeg mace, all sourced from a women’s organic farming co-operative in Kerala, India. Distilled and crafted with alchemy and artistry, Maharani is the first in a line of spirits that create unforgettable sensorial experience of flora and spice that liberate palate and soul. Distillery tours and gin schools will also be offered in the coming months.
