In 1927, the state farm "Zafaran" was created in the village of Bilgah, as its climatic conditions were suitable for the production of saffron. The territory of the state farm covered not only Bilgah, but part of Mashtaga and Shuvelan. However, due to the collapse of the Soviet Union, the territory was shrinking and today it is only 130 hectares. Here 140-150 kilograms of excellent saffron were mined per year, which was mainly used in culinary production. In 1996, the state farm was disbanded and now saffron is grown exclusively in private farms. One example is saffron grown in the village of Zira, which in terms of its taste is not inferior to the world's saffron producers. Saffron grown in the village of Zira is of excellent quality. What determines the quality of saffron? The quality of the spice, first of all, depends on the climatic conditions and the village of Zira, in this regard, meets all the requirements. Quality saffron is also grown in the Azerbaijani province of Sheki. Fertile black soil allows you to get a rich harvest of spices, but in this mountainous region there is more humidity than in Absheron, and often the collection of flowers ends in October.
