Chai Saint Olive is Lyon's first urban winery located in the heart of the 6th district. Creator of urban wines, Chai Saint Olive is an urban wine making establishment: From the reception of freshly pressed grape juice (also called grape musts) to bottling, through to barrel ageing, all the stages of wine making are carried out within the Chai Saint Olive. All the wines are made from local grape varieties (Chardonnay, Viognier, Syrah and Gamay) carefully selected from four estates located less than 60 kilometres from the Chai. Proximity with partner winegrowers is essential. Chai Saint Olive is also a unique event venue dedicated to tastings, private visits, company seminaries, learning sessions, etc.
