We select only the best Italian wheat most of all from Tuscany, such as a rare variety called "Cappelli" . Our production methods are all still strictly below 38 ° both during the drawing process and the drying phase. To see the final product sometimes we have to wait for 6 days. We aim to spread the culture of healthy eating. We also work along side the University of Florence to know more about every medical aspect of our products and we cooperate with them in research as pasta producer.
