First certified by the Orthodox Union in 1982, the bakery has built a reputation for making the best tasting kosher cakes, pastries, cookies and breads in Southern California. Using recipes handed down through generations of bakers, we bake the old fashioned way. Dough is rolled out on wood workbenches. Breads and pastries are hand formed. The oven is lined with well-aged baking stones. Our Rabbi turns on the oven each Saturday night as the bread bakers begin mixing, forming and proofing our breads, rolls and bagels. At 2:00 AM, as the breads cool, the pastry and cake bakers come in to begin their shifts. At 7:00AM the retail store opens with that day’s selection of fresh baked breads, pastries, cakes, and cookies. Over the next six days, there is continuous activity in the bakery, 24 hours a day. During the night and mornings the bakers are hard at work. During the days and evenings, the retail clerks are serving customers and filling orders. Until Friday afternoon, when the oven and stoves are turned off, the bakery is locked up, and everyone enjoys their Sabbath rest.
